Garlic Roasted Sweet Potatoes
I love sweet potatoes, and this recipe is just delicious. In fact, this may be my new go-to recipe for sweet potatoes. It’s a little sweet and a little savory, really easy to prepare, and looks beautiful when served. It’s a different flavor than the traditional sweet potatoes with lots of brown sugar and marshmallows toasted on top, but it doesn’t disappoint. You’re going to love this one!
How to Make Garlic Roasted Sweet Potatoes

Delicious Roasted Sweet Potatoes
This recipe only calls for a few ingredients and makes the perfect side dish!
- 3 extra large sweet potatoes
- 2 Tablespoons of Olive oil
- 3 Tablespoons of butter – melted
- 3/4 cup of shredded Parmesan cheese
- 2 Tablespoons of Italian seasoning
- 1 Tablespoon of minced garlic
- 2 Tablespoons of brown sugar
- 1 package of fresh Thyme

Rinse, and peel the sweet potatoes, and with a very long and sharp knife, cut the sweet potatoes in 1/8 inch slices, and set aside.
Melt the butter in the microwave, and pour the butter into a large (gallon size) Ziploc bag. Add the olive oil, Parmesan cheese, Italian seasoning, minced garlic, brown sugar, and thyme, and mix together in the bag.

Place the sweet potatoes in the bag, and zip the bag closed.
Coat the sweet potatoes with the ingredients in the bag (you’ll have to move them around in the bag with your fingers, and make sure all the slices are coated).

Place the sweet potatoes in a 9 X 13 dish, lined with parchment paper on the bottom, and lay the slices out in rows, or however, you prefer them (see the photo).

Once you’ve placed all the slices in the dish, remove the remainder of the ingredients left in the bag with a spatula, and top the sweet potatoes with the ingredients.

Sprinkle any additional Thyme on top of your sweet potatoes in the dish, and place the dish in the oven at 400 degrees, cook them for 40 – 45 minutes, or until the sweet potatoes are golden brown on the edges, and done in the centers.
Delicious Baked Sweet Potato

Remove the dish from the oven to a wire rack to cool for a few minutes before serving. Serve, and Enjoy!
Easy Sweet Potato Side Dish

NOTE: You can find fresh Thyme in the produce section of your local grocery store. If you’ve never used fresh Thyme, what you want to do is grab the end of the sprig, and pull the herbs off the sprig. I pulled the Thyme into a dish, so I didn’t lose any of the herb. It has a very fragrant scent and gives this dish a wonderful flavor.
You can also use grated Parmesan instead of shredded if you choose.
