Quick and Easy Breakfast Idea
Grab your ingredients; you probably have all or most of these already in your kitchen.
All you need is:
Eggs
Cheese
Veggies (we regularly use tomatoes and peppers, but will add in asparagus, and even bacon if my husband gets a say)
Jalapeños
and onion powder, salt, and pepper.

How to Make Egg Bites
After you have your eggs prepared set them aside and chop your tomatoes, peppers and any other veggies you want to add, then place them in a large bowl.
Spray your silicone mold with non-stick cooking spray. Next beat the eggs, onion powder, pepper, and salt for about 30 seconds.
Pour your egg batter into the bowl of veggies and stir it to combine. Add cheese, mix, and it's ready for the Instant Pot.
Add 1 cup of water to your Instant pot, cover the egg bite mold with foil and place it on a trivet and lower into the pot.
Instant Pot Egg Bites
Secure the lid on the Instant Pot with seal closed and set to "steam" for 8 minutes. Allow the Instant Pot to naturally release for 10 minutes, then quickly release the rest.
Remove the foil and let your egg bites stand for 5-10 minutes to cool.
Garnish Your Instant Pot Egg Bites with jalapeños, peppers, sriracha, or even ketchup for kids.
On the Go Breakfast
If you want to switch it up and make it even healthier use cage-free egg whites and Monterey Jack cheese. You can also eliminate the Jalapeños and use spinach instead.Â

Ingredients
- 6 Large Eggs
- ½ cup Colby jack cheese
- ½ cup Cherry Tomatoes diced
- ¼ cup tri-color peppers diced
- 2 jalapeños diced
- 1 tsp. onion powder
- ½ tsp. salt
- ¼ tsp. pepper
Instructions
- Chop your tomatoes, peppers and any other veggies you want to add, then place them in a large bowl. Set to the side.
- Spray silicone egg bite mold with non-stick cooking spray.Set to the side.
- In a small bowl, blend the eggs, onion powder, pepper, and salt for about 30 seconds.

- Add your shredded cheese and stir again.
- Spoon the mixture into the egg mold and fill it to the top.
- Add 1 cup of water to Instant pot, cover egg bite mold with foil and place it on a trivet and lower into the pot.
