Citrus Salad with Avocado
This vegetarian Winter salad is delicious and bright. It’s definitely one you’ll want to share again and again. This bright flavorful Winter salad recipe will save you from all the cold dreary weather outside with seasonal citrus fruits, hearty greens, and buttery avocados. Plus, it’s light enough to go with dinner and hearty enough to make a filling lunch lal by itself.
Here’s what you’ll need to make your own:
Ingredients:
- 6 handfuls of washed mixed spring greens
- Cucumber
- 1 blood orange or Cara Cara orange
- 2 clementines
- ½ cup of almonds, whole or sliced
- ½ to ⅔ cup of fresh pomegranate arils
- 1 medium ripe avocado
- Olive oil

Once you’ve prepped all your ingredients, follow these simple steps for this delicious Winter citrus salad:
Instructions:
Start by washing and drying all of your ingredients. And If you’re using a whole pomegranate, open it and remove about ½ cup of the rails.

Peel the clementine’s and separate the segments.

Supreme the blood orange by cutting off the outer peel with a sharp knife and then cut across the orange for slices.
Open and slice the avocado.

Thinly slice the cucumbers at an angle and pile the greens onto your serving dish or directly into your salad plates.

Top with all of the fresh goodness so that everything is spread across the top of the salad. Sprinkle on the almonds or try dried cranberries.

Spritz with olive oil or top with your preferred light salad dressing.
Cover and chill for up to 5 hours or enjoy right away.
