Preheat the oven to 350 degrees and spray the round cake pans with baking spray.
Beat the butter, sugars, oil, and vanilla in a large bowl until creamy and combined.
Next, beat in the eggs one at a time until combined.
In a medium bowl, whisk the flour, baking powder, salt, cinnamon, and allspice until combined.
Gradually beat in the dry ingredients
Then, gradually beat in the apple cider and milk until combined and smooth.
Next, divide the batter between the 3 cake pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.
Once cooled, remove cakes from cake pans and place onto cake boards.
Using a cake leveler, remove the domes of the cakes to create even cake layers for stacking.
