In a large bowl, break the eggs, and beat them with a whisk until they're light lemon yellow, and fluffy. Add the milk, and stir.
Add the oil, salt, and sugar, and whisk together.
Add the flour and baking powder, and whisk together just until ingredients are mixed. (Batter may be a little lumpy, but that's okay)
Divide batter equally in three bowls. In one bowl, add ¼ teaspoon of red food coloring gel, and stir to blend. If the color is not bright enough, add more food coloring, a little at a time until the desired color is achieved.
In another bowl, add ¼ teaspoon of black food coloring, and stir to blend. If the batter is not dark enough, add more food coloring gel until the desired color is achieved. In the third bowl, just leave the batter the original color.
Heat an electric griddle until butter melts and sizzles. With the heat on a medium setting, drop the batter for the red pancakes with a ladle, and cook until golden brown. Drop the batter for the black pancakes with a small ladle, or small measuring cup.
Drop the batter for the white pancakes, and cook until golden brown. Flip the pancakes with a pancake turner, and remove to a plate to serve, alternating the red, black and white pancakes.
Continue this step, until all pancakes have been cooked. When all pancakes have been cooked and plated, serve with a dollop of whipped cream on top, and drizzle blue icing from the top down the sides. (see photo) Enjoy!
