Chop your tomatoes, peppers and any other veggies you want to add, then place them in a large bowl. Set to the side.
Spray silicone egg bite mold with non-stick cooking spray.Set to the side. In a small bowl, blend the eggs, onion powder, pepper, and salt for about 30 seconds.
Pour your egg batter into the bowl of veggies and stir to combine.
Add your shredded cheese and stir again.
Spoon the mixture into the egg mold and fill it to the top.
Add 1 cup of water to Instant pot, cover egg bite mold with foil and place it on a trivet and lower into the pot.
Secure lid with seal closed and set to "steam" for 8 minutes. Allow the Instant Pot to naturally release for 10 minutes, then quickly release the rest.Remove foil and let stand for 5-10 minutes to cool.
