Thumbprint Hershey Kiss Cookies
These Thumbprint Hershey Kiss Cookies are so much fun to make!
- ¼ cup softened unsalted butter
- ¼ cup peanut butter
- ¼ cup brown sugar
- ¼ cup white granulated sugar + ¼ cup for coating
- 1 egg
- 1 tsp vanilla extract
- 1 cup flour
- 1 tsp baking soda
- 1 tsp salt
- 16 Hershey Kiss chocolates
Preheat oven to 350 degrees and grease a large baking sheet and set aside.
In a large mixing bowl combine softened butter and peanut butter. Mix with a hand or stand mixer until light and fluffy
Add in both sugars and mix until well combined.
Add in egg and vanilla and stir until just combined.
Mix together flour, salt, and baking soda and add into wet mixture and mix until a dough forms.
**Note: If the dough is sticky to the touch or hard to roll into a ball, refrigerate for 30 minutes to 1 hour to allow it to firm up. Take about 1 tbsp of dough and roll into balls and dip in sugar to coat. Place about 2 inches away from each other on the prepared baking sheet. Continue with all the dough. Bake for 8-9 minutes and then remove and press one Hershey Kiss chocolate in the center of each cookie.
Place back into the oven for 2 minutes or until the cookies are golden brown.
Allow them to cool and enjoy!
**Additional notes: You can use the prepackaged peanut butter cookie mix and just have them prepare it via the package instructions and just add the candy on top for an easier option.
