Thumbprint Hershey Kiss Cookies

These Thumbprint Hershey Kiss Cookies are so much fun to make!

  • ¼ cup softened unsalted butter
  • ¼ cup peanut butter
  • ¼ cup brown sugar
  • ¼ cup white granulated sugar + ¼ cup for coating
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 16 Hershey Kiss chocolates

  • Preheat oven to 350 degrees and grease a large baking sheet and set aside.
  • In a large mixing bowl combine softened butter and peanut butter. Mix with a hand or stand mixer until light and fluffy
  • Add in both sugars and mix until well combined.
  • Add in egg and vanilla and stir until just combined.
  • Mix together flour, salt, and baking soda and add into wet mixture and mix until a dough forms.

**Note: If the dough is sticky to the touch or hard to roll into a ball, refrigerate for 30 minutes to 1 hour to allow it to firm up. Take about 1 tbsp of dough and roll into balls and dip in sugar to coat. Place about 2 inches away from each other on the prepared baking sheet. Continue with all the dough. Bake for 8-9 minutes and then remove and press one Hershey Kiss chocolate in the center of each cookie.
Place back into the oven for 2 minutes or until the cookies are golden brown.
Allow them to cool and enjoy!
**Additional notes: You can use the prepackaged peanut butter cookie mix and just have them prepare it via the package instructions and just add the candy on top for an easier option.
