Cheesy Chicken & Rice
This Cheesy Chicken & Rice recipe is a simple weeknight meal.
1- 6.9 Box of Rice a Roni
1 Can Cream of Chicken Soup
1 Cup Sour Cream
1-2 Cups Cooked Chicken
1 Cup Shredded Cheddar Cheese
½ Cup Chopped Carrots
½ Cup Chopped Red Pepper
1 Tbsp. Butter
Salt & Pepper to taste
Preheat oven to 350 degrees.
Cook rice according to package directions.
While the rice is cooking, in a medium saucepan, add the butter and sauté the carrots and red pepper for about 5-8 minutes.
In a medium size bowl mix together the sour cream, cream of chicken soup, chicken, and the sautéed veggies.
Add this mixture to the cooked rice and mix together, place in a casserole dish.
Top with the cheddar cheese.Place in oven, uncovered for 20-22 minutes. Take out and serve! Enjoy!
Optional: Any veggies can be added or substituted, ie: green pepper, celery, onion, peas, broccoli, or zucchini.
