Cheesy Chicken & Rice

This Cheesy Chicken & Rice recipe is a simple weeknight meal.


  • 1- 6.9 Box of Rice a Roni
  • 1 Can Cream of Chicken Soup
  • 1 Cup Sour Cream
  • 1-2 Cups Cooked Chicken
  • 1 Cup Shredded Cheddar Cheese
  • ½ Cup Chopped Carrots
  • ½ Cup Chopped Red Pepper
  • 1 Tbsp. Butter
  • Salt & Pepper to taste


  • Preheat oven to 350 degrees.
  • Cook rice according to package directions.
  • While the rice is cooking, in a medium saucepan, add the butter and sauté the carrots and red pepper for about 5-8 minutes.
  • In a medium size bowl mix together the sour cream, cream of chicken soup, chicken, and the sautéed veggies.
  • Add this mixture to the cooked rice and mix together, place in a casserole dish.
  • Top with the cheddar cheese.Place in oven, uncovered for 20-22 minutes. Take out and serve! Enjoy!


Optional: Any veggies can be added or substituted, ie: green pepper, celery, onion, peas, broccoli, or zucchini.
