This vegetarian chili is absolutely hearty and filling you don't need any meat to satisfy you. In fact, if you add in a ton of vegetables, it can have an even better hearty taste and flavor!

My husband was hesitant at first as well because he loves a hearty, meaty chili. But once I whipped up a batch of this in my Instant Pot, he was so surprised at how hearty this dish was he keeps asking for more.
How to Make Instant Pot Vegetarian Chili

Healthy Vegetarian Chili
This recipe is so delicious and using an Instant Pot makes it so much quicker to make.
- 3 cups vegetable broth
- 1 large yellow bell pepper, chopped
- Ā½ cup diced carrots
- 2 cups black beans
- 1 cup pinto beans
- 1 cup dried lentils (any kind)
- 1 can of corn
- 2 tablespoon cumin
- 2 cups crushed tomatoes
- 1 tablespoon cayenne pepper
- 2 tablespoon tomato paste
Instant Pot Chili
Start by pouring the vegetable broth into the inner pot of the Instant Pot.
Add the bell pepper, carrots, black beans, pinto beans, lentils, and corn.
Stir everything so that all of the veggies and beans are submerged in the broth.
Top it off with the cumin, cayenne pepper, crushed tomatoes, and tomato paste.
Set it to manual high pressure for 15 minutes then allow for a 10 minute Natural Pressure Release.
Top your chili with garnishes of your choice like sour cream, cheese, etc.
Serve this delicious chili on a cool winter evening and enjoy it!
