Winter Citrus Salad
handfuls of washed mixed spring greens
blood orange or Cara Cara orange
whole or sliced
½ to ⅔
of fresh pomegranate arils
medium ripe avocado
Salad dressing of choice
Wash and dry all of your ingredients.
If using a whole pomegranate, open and remove about ½ cup of the rails.
Peel the clementines and separate the segments.
Supreme the blood orange but cutting off the outer peel with a sharp knife and then cut across the orange for slices.
Open and slice the avocado.
Slice the cucumbers at an angle.
Pile the greens onto your serving dish or directly into your salad plates.
Top with all of the fresh goodness so that everything is spread across the top of the salad. Sprinkle on the almonds.
Spritz with olive oil or top with your preferred light salad dressing.
Cover and chill for up to 5 hours or enjoy right away.
Makes 2 meal size portions or 4-5 side salads
