Winter Citrus Salad


  • 6 handfuls of washed mixed spring greens
  • Cucumber
  • 1 blood orange or Cara Cara orange
  • 2 clementines
  • ½ cup of almonds whole or sliced
  • ½ to ⅔ cup of fresh pomegranate arils
  • 1 medium ripe avocado
  • Olive oil


  • Oranges
  • Grapefruit
  • Seeds
  • Salad dressing of choice


  • Wash and dry all of your ingredients.
  • If using a whole pomegranate, open and remove about ½ cup of the rails.
  • Peel the clementines and separate the segments.
  • Supreme the blood orange but cutting off the outer peel with a sharp knife and then cut across the orange for slices.
  • Open and slice the avocado.
  • Slice the cucumbers at an angle.
  • Pile the greens onto your serving dish or directly into your salad plates.
  • Top with all of the fresh goodness so that everything is spread across the top of the salad. Sprinkle on the almonds.
  • Spritz with olive oil or top with your preferred light salad dressing.
  • Cover and chill for up to 5 hours or enjoy right away.


Makes 2 meal size portions or 4-5 side salads
