Easy Cereal Cupcakes
This recipe only calls for a handful of ingredients and using a boxed cake mix makes it such a breeze!
Ingredients needed:
- Boxed vanilla cake mix + ingredients to make it**
- 2 sticks unsalted butter, softened
- 4 cups icing sugar, sifted
- 2-3 tablespoon milk
- Green gel food coloring
- Blue gel food coloring
- Yellow gel food coloring
- Red gel food coloring
- ½ cup Lucky Charms cereal
**We recommend splitting the portions in half, as most cake mixes yield about 24 cupcakes. This way, you can make one dozen. But of course make as many as you'd like, because everyone will want one.
St. Patrick's Day Cupcakes
Start by preparing the cupcakes according to the box’s directions and make certain that you allow the cupcakes to cool completely before decorating.
Add in the butter, icing, sugar, and milk into a large bowl. Use an electric mixer to beat together all the ingredients and make certain that you start on low and gradually increase to high.
Beat ingredients until it is smooth and you're able to create semi-stiff peaks.
Bake the cupcakes according to the box directions. And let them cool completely before decorating.
Cupcake Decorating Ideas
Divide the buttercream into 4 separate bowls. Add one color of gel food coloring to each bowl.
To achieve a rich color, add about 2-3 small drops (a bit less than ¼ of a teaspoon).
Mix each bowl of buttercream until completely tinted.
Rainbow Cupcakes
Attach the Wilton icing tip #21 to a piping bag. Scoop colored buttercream into the piping bag, alternating colors.
Frost each cupcake into a swirl motion and look how beautiful they turn out.
Decorate each cupcake with cereal, using mainly the marshmallow shapes.
